New Staff
We've added two new members to the FIT FOR PLAY Team. April Koskinen, MPT and Matt Kirkwood, degreed fitness professional. April is now one of our 7 licensed physical therapists on staff. She has already begun seeing patients using our one-on-one therapy approach. Matt joins our fitness center staff as a personal trainer and assistant manager. Italian Baked Salmon Steak
Serves 4-6
Ingredients
4-6 salmon steaks
1 package low-sodium Italian salad dressing mix
½ cup water
2 tablespoons lemon juice
6-8 ounces fresh sliced mushrooms
¼ cup grated low-fat Parmesan cheese
Preparation
Arrange salmon steaks in a greased 13 x 9 x 2-inch baking dish. Combine low-sodium salad dressing mix, lemon juice, and water; pour over salmon. Cover dish with aluminum foil. Bake at 350° for 20 minutes. While salmon is baking, saute mushrooms in extra-virgin olive oil. Top salmon with sauteed mushrooms and sprinkle with low-fat Parmesan cheese. Continue baking uncovered for another 10 minutes.
